Ø  1 cup basmati rice

Ø  2 medium-sized potatoes, peeled and diced

Ø  1 tablespoon ghee or vegetable oil

Ø  1 teaspoon cumin seeds

Ø  1 small onion, finely chopped

Ø  2-3 green chilies, cut (adjust to your flavor tendency)

Ø  1/2 teaspoon ginger glue or finely ground ginger

Ø  1/2 teaspoon garlic paste (optional)

Ø  1/2 teaspoon turmeric powder

Ø  1/2 teaspoon red bean stew powder (conform to your zest inclination) Salt to taste

Ø  2 cups water

Ø  Fresh cilantro leaves for garnish

1.      Wash and Soak the Rice:

 

Ø  Wash the basmati rice completely under cool running water until the water runs clear.

Ø  Soak the rice in water for about 20-30 minutes. Drain and set aside.]

2.    Boil the Potatoes:

 

Ø  Place the diced potatoes in a pot and cover them with water.

Ø  Bring the water to a boil and cook the potatoes until they are parboiled but still slightly firm (about 6-8 minutes).

3.    Heat the Ghee or Oil:

 

Ø  In a large, heavy-bottomed pan or a rice cooker, heat ghee or vegetable oil over medium heat.

4.    Add Cumin Seeds:

 

Ø  Add the cumin seeds to the hot oil and let them sizzle for a couple of moments until they discharge their smell.

5.    Sauté Onions and Aromatics:

 

Ø  Add the finely slashed onions and green chilies to the skillet. Sauté until the onions become delicate and clear.

Ø  Add ginger and garlic paste (if using) and sauté for another 1-2 minutes until the raw smell disappears.

6.    Add Spices:

 

Ø  Add the turmeric powder, red bean stew powder, and salt. Blend well to get the flavors together with the onion mix. Cook the Potatoes and Rice:

 

Ø  Add the parboiled diced potatoes to the pan and cook for a few minutes, allowing them to pick up the flavors.

Ø  Add the drained rice to the pan and stir gently to combine with the other ingredients.

7.    Add Water:

 

Ø  Pour in 2 cups of water and bring it to a boil.

8.    Simmer and Cook:

 

Ø  Once the water comes to a boil, reduce the heat to low, cover the pan, and let the rice simmer for about 15-20 minutes, or until the rice is cooked and the water is absorbed.

Ø  Fluff the potato rice with a fork. Garnish with fresh cilantro leaves.
